Just a few folds and stitches

Fold the hem with the length you need to shorten

Thread your needle

Bring the needle up from the wrong side of the jeans

Sew a line of backstitches all around, just below the hem as marked above

This is how it would look on the inside

Flip the fold to the inside of the jeans and flip the hem over to the right side.
